Cheese Borekas Triangles

Balkan cheese-stuffed pastries great for morning teas, lunch boxes and picnics. At Ima we make our own butter puff pastry - try and source a good quality puff pastry.

Ingredients

  • 1 kg pack of good puff pastry made with butter

Cheese mixture

  • 200g Katchkaval Cheese if you can find it otherwise sabstitue for Pecorino Romano Cheese
  • 250g good quality Feta Cheese
  • 200g Riccota
  • 1 egg for the filling plus 1 egg for eggwash

Method

Heat oven to 180°C.

Mix all the filling ingredients together.

The pastry should be rolled out to a thickness of 5mm

Cut the pastry in to squares according the the size you want to end up with (small as nibbles or bigger for a meal). Brush with water you are about to fold one corner of the square towards the other corner diagnaly across to make a traingle that will enclose the filling, so keeping that in mind place a mound of filling on the half the square that would be one side of the triangle leaving 0.5-1 cm margin of pastry, fold over and seal. You can use a fork to mark and seal the around the folded two sides.

Brush with beaten egg, sprinkle sesame seeds, bake until puffed and golden brown.
