Double Shot Cafe's Baked Eggs
Ingredients
- 2 eggs
- Half cup of feta
- A third of red onion sliced thinly
- A handful of potato, cubed
- 5-6 cherry tomatoes, halved
- Half a chorizo sausage, sliced
- Dash of olive oil
- Salt & pepper
- Chives
- 2 tablespoons of Anathoth tomato relish
Method
Put a dash of olive oil into a cast iron pan
Sauté red onion, chorizo & tomato relish.
Add potato and season with salt and pepper.
Add cherry tomato and crack the two eggs on top.
Top with feta and bake in the oven for 14 minutes @ 180 degrees.
Garnish with chives and lightly drizzle a good olive oil over the top.
