Queen of Puddings

Ingredients

  • 1 ½ cups stale bread, bread crumbs. Could process bread into coarse crumbs and leave around on a bench for an hour or so
  • 1 litre milk
  • 3 eggs
  • vanilla
  • ½ cup sugar (brown)
  • Jam. Plum or other
  • 2 Tbl sugar for meringue

Method

Scald milk. Add bread crumbs and let soften.

Beat together the ½ cup sugar and the egg yolks. Add to the milk and gently combine.

Pour into a baking dish, set in a dain marie contraption in a moderate oven for about an hour. Until the custard is just set. Let cool.

Cover custard with jam.

Beat egg white until stiff, graduallly add the sugar and beat in.

Cover with meringue. Put into moderate oven until lightly browned.

Serve hot or cold.
