Remoulade Sauce

Ingredients

  • 2 yolks
  • 1 tsp white wine vinegar
  • 1 tsp dijon mustard
  • 300 ml canola oil
  • 25 g gherkins
  • 25g capers
  • 1 anchovy
  • 1tsp chopped chervil
  • 1 tsp chopped parsley
  • 1 tsp chopped tarragon
  • salt & pepper

Method

Place the egg yolks, mustard & vinegar in food processor for 10 seconds then with the motor running slowly drizzle in the oil.

Finely chop gherkins, capers, anchovies and all herbs. Add to the mayonnaise base.

Season with salt and pepper to taste.
