Soy Glazed Pigs Cheek
Ingredients
- pigs cheek
Soy glaze
- 2 palm sugar
- 1 tbsp of fennel seeds
- 1 tbsp of coriander seeds
- 4 banana or large shallots
- 50g of ginger
- 4 cloves of garlic
- 1 sticks of lemon grass
- 2 ltrs of chicken stock
- 150 ml of kekap manis
- 250 mls of light soy sauce
Method
Soy Glaze
Add everything into a pot and bring to the boil remove from the heat and add 2 coriander roots and allow to cool.
Pigs Cheek
Place 1kg of pig’s cheek into a large crock-pot or roasting dish and cover with the soy glaze. Reserve a quarter of the stock to glaze. Cook for 12 hours at 85°C or on high in the crockpot.
Remove from heat and allow to cool in the cooking liquid. Then remove and refrigerate till needed.
