Yusheng “Prosperity Toss” King Salmon & Vegetable Salad

Ingredients

 

  • 1 large carrot - peeled and sliced into long thin lengths
  • ½  telegraph cucumber - sliced into long thin lengths
  • ¼ red cabbage - thinly sliced
  • 1 baby cos - sliced thinly
  • 2T pickled ginger
  • 1 yellow capsicum - sliced into long thin lengths    
  • 6 wonton wrappers, lightly fried to crispy 
  • 200g either fresh sashimi sliced salmon or sliced smoked or Gravlax salmon (I prefer to use sashimi salmon)

Dressing

  • 1T grapefruit marmalade
  • 2T fresh lemon juice
  • 1T seasoned sushi vinegar
  • 4T olive oil
  • 1 pinch mild chilli flakes

Method

Arrange your vegetables around your plate in nice, neat bundles, using the cos in the centre as the centrepiece. 

Lay the sliced salmon over the cos.

Dress all the vegetables liberally with the sweet and sour grapefruit dressing.

Now the fun - take to the table for the “prosperity toss, mix and toss the salad together at the table - get everyone involved - the higher the toss the greater the prosperity!
