A Tongan culinary artist has recently been appointed as the Executive Chef at Auckland's Skycity restaurant, The Grill.
Touvai Poloniati's journey has come full circle as it was at Skycity where he completed his chef apprenticeship as a teenager.
From there he gained international experience, sharpening his craft in renowned restaurants spanning Hong Kong, Australia and Canada.
