Food stylist and chef Gretchen Lowe shares a recipe to match the current muggy weather - a light and bright vegetarian laksa.
Although there are lots of ingredients, this mouth-watering meal is actually quite easy, Lowe tells Jesse Mulligan.
“What I love about it is it’s bright and fresh for summer and you can load it with whatever you like. Whatever you’ve got in the garden."
Traditionally, laksa is combined made with chicken, tofu or prawns but kumara works well in this dish, she says.
"I always add lots of lime juice, they’re not in season and pricey now but I think they are one of those ingredients you can’t really skip and you only need one or two.”
