Barbecue Sauce
Makes 3½ cups
Ingredients
- oil for cooking
- 1 onion, diced
- 4 garlic cloves, crushed
- ¼ teaspoon celery seeds
- 1 cup tomato sauce
- 1 cup tomato juice
- ½ cup liquid honey
- ½ cup cider vinegar
- ¼ cup mild English mustard
- 2 tablespoons Tabasco sauce
- 2 tablespoons Worcestershire sauce
- 2 tablespoons sweet smoked paprika
- salt and pepper to taste
Method
Heat a large saucepan over a medium heat and add a little oil. Then sauté the onions and garlic until soft. Add the celery seeds and cook for a further minute. Next add the remaining ingredients and bring to the boil. Simmer until thickened, about 20 minutes. Season with salt and pepper.
Transfer to a food processor and purée until smooth.
Use immediately or store in an airtight container in the fridge for up to 4 weeks.
