Ingredients:

  • 700 g beef mince

  • 8 tortillas

  • 8 cheese slices

  • ¼ iceberg lettuce shredded

  • ½ red onion thinly sliced (see Chef's tip)

  • 1 carrot grated

  • 4 tbsp picklenaise

Method:

1 Divide the mince into clumps to match the number of tortillas. Press the mince onto each of the tortillas, covering the base. It will shrink a little so go right to the edges. Season with salt and pepper.
2 Heat a frying pan (2 if you have them) or hot plate and cook the tacos, meat side down, for 3 minutes before turning over and placing a cheese slice on each.
 3 Once the cheese has melted and the taco is starting to colour (don't allow it to get crisp), remove from the heat and top with lettuce, onion, carrot and picklenaise.
4 Gently fold in half and eat with your hands.

Chef's Tip:

When in season you could also add sliced tomato and avocado to these tacos.

Missing your tomato sauce? Add a squirt as well if you want to.
