Carrot Vanilla Puree
Ingredients
- 3 carrots peeled and sliced
- 1 vanilla pod
- 2 tblsp maple syrup
- 2 tbsp olive oil
Method
Scrape the seeds out of the vanilla pod and reserve. Place the carrots, now empty vanilla pod in a sauce pan and cover with water. Bring to the boil and simmer until the carrots are very soft. Strain the carrots keeping the cooking water. Place the carrots into a blender with the vanilla seeds, olive oil and maple syrup and blender until smooth, adding a little cooking water if needed to get the blender running smoothly. Chill until needed.
