Christmas Fruit Mince
Ingredients
- 1/3 C sultanas
- 1/3 C currants
- 1/3 C raisins
- 3 pitted dates, covered in hot water to soften
- 4 - 5 dried apricots, chopped
- 3 tbsp brown sugar
- ½ sml apple, peeled, cored and diced
- 1 sml banana, mashed
- 1 tbsp brandy
Method
Place sultanas in a food processor fitted with a metal blade and chop. Tip sultanas into a bowl.
Repeat the process with the currants, raisins, dates and apricots.
Add sugar, apple, banana and brandy to the fruit mixture and combine.
Store in an air-tight container in the refrigerator for two to three weeks
