Duck and Cucumber Rolls with Hoisin Sauce
Method
- 10 rounds rice paper
- ½ roasted chinese duck or roast chicken, Pull meat from the bones and discard fat shred flesh into bite size strips
- 1/3 cup of Hosin sauce
- 1 cucumber peeled and chopped into battons (not longer than the length if rice wrapper)
- 1 large bunch coriander (leaves only)
Ingredients
Lay out a damp clean tea towel and place rice wrappers into warm water for about 2 seconds or until it just begins to soften.
Transfer rice paper wrapper onto a clean work surface, brush a generous strip of Hoisin sauce down the middle of the wrapper and place duck, cucumber and coriander on top and roll to secure (follow instructions on the rice paper wrapper).
