These are non-traditional tacos flavours but it all works together brilliantly and is a meal that can be made quickly on a weeknight.
Serves 4
Ingredients
- 500g firm white fish
- 1/2 cup cornflour
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 1 teaspoon teaspoon smoked paprika
- 1 teaspoon salt
- Oil or ghee for frying
Caper mayo
- ½ cup good quality mayonnaise
- 2 tablespoons capers
- ½ teaspoon dried dill
- 2 teaspoons lemon juice
- Sea salt and cracked black pepper
Method
Combine the caper mayonnaise ingredients in a small bowl and stir well. Season generously. Place in fridge until ready to use.
Combine the cornflour, curry powder, paprika and salt in a large bowl.
Cut the fish into bite-sized pieces and toss together with the flour.
Heat 1cm of oil in a sauté pan over a medium / high heat. Cook the fish in 2 batches (to avoid overcrowding the pan) until golden and crunchy. A minute or so on each on each side should be plenty.
To assemble: heat the tortillas. Top each with some shredded cabbage, avocado and some radish slices.
Place a few pieces of fish on each and drizzle with the caper mayonnaise.
To serve
8 soft corn tortillas (or flour tortillas)
Finely shredded cabbage
1 avocado - stone removed and sliced thinly
2 radishes - sliced thinly
Handful fresh coriander - roughly chopped
