Family Chop Suey for under $20

Ganesh Raj joined Kathryn Ryan to talk about his Humble Yum Yum project that aims to create delicious, healthy family meals for under $20.

This recipe comes from Tana Umaga's mum, Tauese.

 Ingredients: (including cost per unit for 4 people)

600g Rice Noodles  - DRY Double Phoenix Vermichelli $1.69

250g Chopped Streaky Bacon  - Pams Streaky  $5.49

2 tbl Onion Powder - Mrs Rogers Onion Powder $1.99

2 tbl Garlic & Ginger mix - Pams Crushed Garlic  $0.26

1 cup Soy Sauce -  Kikkoman Less Salt Soy $1.68

1 cup Chicken stock (liquid, cube or powder)   $0.58

2 tsp Sesame oil  - Kuki Sesame Oil  $0.49

2 cups Mixed frozen veg - Pams Mixed Veg  $1.65

1 can (425g) baby corn (drained) - Golden Sun Whole Baby Corn $2.99

Spring onions, chopped for garnish 1 Spring Onions $1.99

* Pantry: 2 tbl veg oil, salt and pepper

TOTAL $18.81

 

Method:

1. Cook the rice noodles according to the instructions on the pack. Then set aside.

2. Heat the oil in a large pan, over a medium heat.

3. Chop the bacon up and fry it in the oil. You are creating flavour in the oil.

4. When the bacon starts to get crispy, add the onion powder and garlic ginger mix and cook for 5 mins till the onions soften. You are building more flavour.

5. Next add the frozen veg and the baby corn. Sauté for 2 mins.

6. Add the soy sauce, chicken stock, sesame oil, and noodles and let the pot simmer for 3 minutes. You want to leave some liquid in the pan.

7. Sprinkle with spring onion to serve

*NOTE: Remove the bacon, and replace the stock with vege stock, to make the dish, Vegan.
