Gingered Baby Beetroot

Ingredients
- 820g can baby beets
- third cup sugar
- 2 tsp cornflour
- half tsp ground ginger
- 1 orange, grated rind and juice
- 1 Tbsp vinegar
- 30g butter
Method
Drain the beets, and reserve quarter cup of liquid. Combine sugar, cornflour and ginger, in orange rind and juice, vinegar and beet juice.
Cook over low heat, stirring until mixture thickens. Add baby beets and butter and heat through.
