Herby Feta and Pistachio Spread

Ingredients

  • Black pepper
  • 70g pistachio nuts, roasted and shelled
  • ⅓ cup olive oil
  • 150g feta, crumbled
  • ⅓ cup thick Greek yoghurt
  • ½ lemon, zested
  • 1 cup fresh herbs (e.g basil, mint, parsley)
  • 1 garlic clove
  • 1 tsp chilli flakes

Method

Blitz the pistachios and olive oil in a food processor until finely chopped

Add the feta, yoghurt, lemon zest, herbs, garlic and chilli flakes.

Blitz until the mixture is well combined and has a lovely rustic texture. Season with sea salt to
taste and pulse again.
