Herby Feta & Pistachio Spread
Ingredients
- Black pepper
- 70g pistachio nuts, roasted and shelled
- ⅓ cup olive oil
- 150g feta, crumbled
- ⅓ cup thick Greek yoghurt
- ½ lemon, zested
- 1 cup fresh herbs (e.g basil, mint, parsley)
- 1 garlic clove
- 1 tsp chilli flakes
Method
Blitz the pistachios and olive oil in a food processor until finely chopped
Add the feta, yoghurt, lemon zest, herbs, garlic and chilli flakes.
Blitz until the mixture is well combined and has a lovely rustic texture. Season with sea salt to
taste and pulse again.
