Kimchi Pancake

Kimchi Pancake 

Kimchi pancakes are a great way of using up extra kimchi that may be overripe.

1 cup flour
½- ¾ cup cold water
grind of black pepper
250g chopped cabbage kimchi
1 spring onion, sliced
1 tablespoon Korean red pepper powder 
1 beaten egg

Mix flour and enough water to make smooth batter. 
Add remaining ingredients and stir.
Add vegetable oil to a frypan and when piping hot add half of the mixture to the pan and cook the pancake. 
When the first side of the pancake is golden, flip and cook the other side add an extra drizzle of oil around the sides to make them crispy.
Remove from pan and repeat with the remaining mixture.

Serve it with a dipping sauce made from soy sauce with a splash of sesame oil.


Tip: Try adding 1-2 rashers chopped cooked bacon or top with grated cheese and place it under the grill until cheese has melted.
