Lemon & Coconut Raw Balls

Makes 18 balls / Takes 10 minutes / Gluten-free + Dairy-free

This is a seemingly simple recipe but the fresh lemon zest and juice really makes these bliss balls POP!

Ingredients

  • 1 cup ground almonds
  • 1 ½ cups desiccated coconut, plus extra for rolling
  • 4 Tbsp coconut oil
  • 4 Tbsp honey
  • 1 large lemon, zested & juiced
  • 1 tsp vanilla extract
  • 1 pinch sea salt

Method

Place all of the ingredients into a food processor. Pulse a few times until the mixture starts to hold together.

Roll the mixture into small round balls with your hands.

Place the extra desiccated coconut in a shallow bowl and roll the balls until well coated.

Chill in the fridge for 30 minutes before serving.

*Tip: These balls are delicious made with orange zest and orange juice instead of lemon, too! If you want to make
them vegan, omit the honey and use a natural sweetener or some good-quality maple syrup.
