Moroccan Style Meatballs

Ingredients

  • 400g pork mince
  • 1 onion - grated
  • 1T sweet chilli sauce
  • 1t Moroccan seasoning
  • 1 egg
  • ¼ cup breadcrumbs
  • salt/pepper
  • 1T oil
  • 1 tin of tomatoes
  • 1 tin of chickpeas - drained and rinsed
  • 1 cup chicken stock
  • 1½ cups couscous
  • 3 cups green beans

Method

In a large bowl, combine the pork mince, onion, sweet chilli sauce, Moroccan seasoning and egg. Add enough breadcrumbs for the mixture to hold together.

Season with salt and pepper and roll into meatballs; refrigerate until required.

Add the oil to a large frying pan and brown the meatballs for 6-8 mins.

Add the tin of tomatoes, tin of chickpeas and chicken stock to the frying pan. Allow to simmer uncovered for 15 minutes (until the meatballs are fully cooked).

Steam the green beans in a saucepan with a small amount of water.

Cook the couscous according to packet directions.

Serve the meatballs on the couscous and the green beans on the side.
