Nicki's Orange Cake

Ingredients

  • 1 cup yoghurt
  • 140g cornmeal
  • 2 eggs
  • zest of 3-4 oranges or pulp of 2 oranges
  • 250g sugar
  • 250g butter
  • 200g self-raising flour (or 100g cornflour, 100g rice flour and 2 tsp baking powder)

Method

Combine yoghurt, cornmeal and orange in a bowl. Cover and refrigerate for 2 hours.

Cream sugar and butter together then add to refridgerated mix.

Beat in eggs, adding one at a time.

Add flour and mix well.

Bake at 180°C for 50 minutes.

Syrup topping:

Combine 1 cup of sugar and ½ cup orange juice in a saucepan. Bring to a simmer and pour over the hot cake.
