Penne Arrabiata

Ingredients

  • olive oil
  • chopped onion
  • 4 cloves of minced garlic
  • ½ cup red wine
  • 2 T brown sugar
  • 2 T basil
  • 1 can tomato paste
  • 1 T red pepper flakes
  • freshly ground black pepper
  • 2 x 400g tins crushed tomatoes
  • penne pasta

Method

Heat oil in a heavy-based pan. Saute onion and garlic for 5 minutes. Stir in wine, sugar, basil, red pepper flakes, tomato paste, pepper. Combine. Mix in crushed tomatoes and bring to a boil. Reduce heat to medium and simmer for 20 minutes. Mix into al dente penne.
