Porter Shanks
(Serves 6)
Ingredients
- 1 rasher bacon, chopped finely
- 2 onions, chopped
- 3 cloves garlic, chopped
- sml bunch fresh marjoram, chopped finely
- 6 lamb shanks
- 330 ml bottle robust porter (a strong black beer)
- 3 lge carrots, peeled and sliced into chunks
- 2 sticks celery, sliced thickly
- 1 sml parsnip
- 1 bay leaf
Method
Sweat the bacon, onion, garlic and marjoram in oil. Set aside.
Sear the lamb shanks on all sides.
Put shanks into a casserole dish with the bacon, onion, garlic and marjoram mixture.
Add the bottle of porter, carrot, celery, parsnip and bay leaf. Cover the casserole with a tight lid (use baking paper if the seal isn’t secure).
Cook at 180ºC for two hours or until meat falls away easily from the bone.
