Potato Foccacia Bread

Ingredients

  • 400g potato
  • 1 litre water
  • 1kg flour
  • 20g dry yeast
  • 20g sugar
  • 10g salt
  • canola oil

Ingredients

1.    Boil potatoes with water, puree when cooked with a hand blender.

2.    Add water to bowl and then when it is warm, and about 45C, add the flour, using your hand or a spatula.

3.    Then add sugar and yeast and then salt. 

4.    Place in ¼ of the dough into 4 very well oiled and salted heavy skillets/pans, cover and prove. 'FLIP' the edge over, twice at 30 minute intervals so it does not stick to the edge of the pan.

5.    Once proved, Cover with more olive oil and salt and then Bake at 210, fan forced oven for 20 minutes.

6.    Drop the oven to 190C and cook for 15 minutes. Turn out onto cake racks, and sprinkle with more salt.
