Ras El Hanout - Spice Mix
Ingredients
- 1 teaspoon whole coriander seeds
- 1 teaspoon fennel seeds
- 1 teaspoon cumin seeds
Grind in a mortar or pestle until powder or whizz in a spice grinder. In a hot skillet pan cook (toast) until you hear ‘snapping and ‘popping’. In the meantime, combine:
- 1 tsp turmeric
- 1 tsp paprika (not smoked)
- 1 tsp cinnamon
- ½ tsp cayenne
- 1 tsp ground ginger
- ½ tsp ground cardamom
- ½ tsp ground nutmeg
- freshly ground sea salt and freshly ground black pepper
Method
Combine all spices including the toasted ones in a jar and shake well.
