Swede Gratin
Serves 4 as a side dish
Ingredients
- 1kg swede
- 100g unsalted butter
- 2 fat cloves of garlic
- 80g finely grated Gruyere cheese
- 4 sprigs of fresh thyme
- 1 sprig of rosemary
Method
Preheat the oven to 200˚C. Peel the swedes then slice them thinly by hand or the slicing attachment on a food processor. You want the slices to be as thin as possible really.
Melt the butter in a small frying pan or microwave, crush and finely chop the garlic.
Spread a little of the melted butter over the base of a shallow baking dish and cover with a layer of the swede slices.
Pour over a little more of the butter and sprinkle some of the garlic over, seasoning with salt, pepper and some of the herbs.
Sprinkle with Gruyere and cover with more layers of swede, garlic, herbs and cheese until all the swede is used.
Finish the top layer with a good dose of cheese, grating more if you have too.
Bake the gratin in the oven for 45 minutes.
Remove from the oven and press the gratin down with a fish slice. Leave to cool for a few minutes before serving, cut into slices. It's wonderful served cold with a dish of relish.
