Baked Paua Slices
Once Paua arrives live at your door;
Cut an X into the meat from one side of the shell to the other about 3-5mm deep.
Leave in the fridge overnight or on ice, this will help tenderise the paua meat as it ‘bleeds’.
Shuck your paua (details on Tora Collective's website).
Slice thinly as possible width ways across the paua
Place back into the shell and add seasonings:
We use:
Thyme, rosemary & butter
Oregano & butter
Sesame & soy
Kimchi
Whatever is in your fridge and you like the taste of!
Bake on the coals, or in your oven covered in tinfoil for 10 minutes or until cooked.
