Tuna Tataki, Salted Watermelon Salad, Green Tea Soba with My Style Ponzu Sauce
(Serves 6)
Ingredients
- 6 100gm pieces tuna
Water Melon Salad
- 600gm watermelon
- 10 gms Malden sea salt
My Ponzu
- 75ml low salt Kikkoman Soya sauce
- 75ml sake
- 75ml raspberry vinegar
- 6 cloves
- 1 star aniseed
- ½ cinnamon quail
- 150 gms cooked green tea soba noodles
Method
Mix together all the ponzu ingredients and simmer for 5 minutes to allow all the flavors to infuse.
Strain and allow to cool.
Cut water melon into 1 cm dice and toss with the salt.
To serve:
Marinade the tuna in a little of the ponzu for 3 to 4 minutes.
Remove tuna from the ponzu, drain and pat dry.
Sear tuna for 1 minute on each side in a hot pan, spoon melon into a bowl and top with the warm tuna and the soba noodle spoon around the remaining my ponzu.
