Vegetarian Barbecue: Tofu and Polenta Kebabs
Makes 12 kebabs.
Ingredients
- 12 kebab sticks
- polenta cubes (recipe also available)
- tofu cubes (recipes also available)
- 24 button mushrooms
- 2 red capsicums, seeded and cut into 2cm squares
- 24 cherry tomatoes
- 4 courgettes, sliced into thick rounds
- vegetable oil
Method
Soak kebab sticks in water so they don't burn on the barbecue. Thread skewers with browned polenta and tofu cubes, mushrooms, capsicums, tomatoes and courgettes. Brush with vegetable oil and cook on the pre-heated flat plate of the barbecue.
