White Bean Dip

Ingredients
- 400g can of cannoleni or butter beans
- 1 clove garlic
- juice of 1 lemon
- quarter cup olive oil (add more if needed)
- quarter cup parsley or mint
Method
Drain and rinse the beans. Put all ingredients in food processor and process until smooth. If mixture is too thick, add more olive oil. Season to taste.
