Caviar is traditionally known as a delicacy plucked from wild fish in the Caspian sea but it's also being farmed right here in New Zealand.
Mt Cook Alpine Salmon in the Mackenzie District is in the midst of its short caviar harvest period. It began experimenting with the specialty three years ago.
