Today's recipe for Agria Potatoes
Dry fried potatoes
1 kg Agria Potatoes, washed and diced into 1.5 – 2 cm pieces
4- 6 tbs Olive Oil or vegetable oil
2 tsp Mustard seeds
2 tsp Cumin seeds
2.5cm Ginger, finely chopped or minced
3 cloves Garlic, finely chopped or minced
3-5 Chillies, finely chopped or minced, according to taste
1 – 2 stems Curry leaves (optional)
2 tsp Salt, according to taste
1 tsp Turmeric powder
1 Lemon, squeezed
Fresh Coriander, finely chopped
Heat the oil in a non-stick frying pan over a medium heat
Once the oil is hot, add the mustard seeds followed by cumin seeds and let them splutter, keeping the lid on the pan
Add the curry leaves and ginger-garlic-chillies to further infuse the oil and stir for 5-10 seconds
Now add the potatoes, then the salt and turmeric and stir well to evenly coat the potatoes to a golden yellow colour
Place the lid on the frying pan and cook for 7 – 10 minutes, stirring once or twice – this will slightly ‘steam’ the potatoes
Remove the lid, and continue to cook, occasionally stirring gently, until cooked (10 – 12 minutes)
Remove from the heat and squeeze the juice of ½ - 1 lemon and garnish with chopped coriander, gently mixing through to combine all the flavours
Serve hot, with some roti or naan, or as a side dish. This dish will keep fresh in the fridge, for a week, if it lasts that long!
