With Covid restrictions continuing to take a huge toll on businesses, particularly in the hospitality and events sectors, some operators are having to make big decisions in order to stay afloat ... Owners of 'The Local' on Waiheke, Simon and Sara Pope, made the decision to retrain so they could take care of all aspects of the business themselves, with Simon doing a Cookery apprenticeship and Sara going front of house, Simon told me how the decision to evolve began.
