A tale of two kitchens
Antonin Carême was the most celebrated chef of the early 19th century, a master of pastry and French cuisine. Perhaps that’s why Martinborough chef Jo Crabb named her cooking class company (based at Palliser Estate Wines) after him. She and her partner, artist Stephen Allwood, spend part of the year running cooking classes and the rest of the year gathering recipes in France.
