"Lucy [Corry] is a brilliant food writer. You will love her simple, seasonal and flavourful recipes, just as I do" - Nadia Lim.
Homecooked is a new book of "seriously cookable recipes for every New Zealand season and occasion" from award-winning Wellington food writer Lucy Corry, aka The Kitchenmaid.
Lucy tells Jim Mora that she hopes the book will help people realise cooking needn't be arduous and you don't have to go to "MasterChef-level stress and bother" to create a delicious meal.
Cold roast chicken (even supermarket rotisserie chicken) is a great thing to have on in the fridge for a quick meal, Lucy says.
She has several chicken salad recipes in Homecooked, including this Roast Chicken Salad with Dates and Almonds
Lucy, who is also a journalist, started food blogging about ten years ago when she was living in Hamilton with a new baby and struggling with her place in the world.
The friendship and inspiration of food blogger Joan Browning "saved her life", and with Joan's encouragement, Lucy became The Kitchenmaid.
"Now it's on the front of the book and I'm with it for life".
