Batting first ND made 289 for seven but an unbeaten 127 from Black Cap Henry Nicholls guided Canterbury to victory, as they reached their target for just two wickets down and five overs to spare.
It's just the second time Canterbury has won the title in the past 14 seasons.
Canterbury pace bowler Will Williams finished the season as the competition's leading wicket taker with 20 dismissals, two ahead of ND's Brett Hampton.
Auckland's Will O'Donnell was the top run scorer 537 runs from 10 innings at 53.70.
Canterbury's and ND's attentions will now turn to trying to win the first-class Plunket Shield where they are also the top two sides respectively.
With four of the eight rounds remaining, Canterbury holds a 20-point lead over ND - the red-ball championship resuming this Thursday, 11 March in Whangarei, Christchurch and Napier.
Lions v Springboks in Australia a 'no go'
The British and Irish Lions rugby board has reportedly turned down Australia's offer to stage their tour of South Africa this year which is under threat because of the COVID-19 crisis.
The Lions are scheduled to tour South Africa for eight matches in July including three tests against the world champion Springboks but the series remains under threat because of the impact of the pandemic.

A South African Rugby spokesperson confirmed to Reuters in January that they had received an offer from Australia, who have been relatively successful in containing the pandemic, to host the tour.
But the BBC has reported that playing the series in Australia had been declared "unviable" by the Lions management following a meeting on Friday.
A final decision on the matter will be made later this month.
Reports added the tour to South Africa could still go ahead as planned with limited numbers or no fans present in stadiums.
Matches could also be played in the United Kingdom and Ireland, or the series could be postponed or cancelled altogether.

Woods found unconscious at crash scene
Tiger Woods was found unconscious after his car crash in California last month, it has emerged.

A man who lives nearby said he heard the crash and walked to the scene where he found the golfer with his face and chin covered in blood, court documents based on a police affidavit show.
He said he tried to speak to the champion but did not get a response.
Woods required lengthy surgery to a fractured leg and shattered ankle after the accident in Los Angeles County.
Police have said there was no evidence that he was impaired by drugs or alcohol.
The first emergency crews who arrived at the scene reported that Woods was "calm and lucid" as he was cut from the wreck of the SUV.
It had not been previously disclosed that Woods had lost consciousness.
In the affidavit, filed by the Los Angeles County Sheriff's Department, police said that Woods could not remember driving.
Officers had to tell him he had been in a crash, according to the documents.
Police filed the affidavit in order to try to obtain the SUV's data recorder for the investigation into what caused the crash.
