Jess Daniell of Jess' Underground Kitchen shares her recipe for melon caprese salad as well as some ideas for savoury dishes with seasonal fruit.

While Jess loves a traditional caprese salad – with the trio of tomato, basil and mozzarella – she likes to swap the tomato for melon when it's in season.
"You get this beautiful freshness that comes through especially if the melon has been in the fridge – nice and chilled."
This salad can be made into a complete meal with the addition of cured meat, she says.
The green dressing that accompanies it also be used as a sauce and a marinade so she recommends making up a big batch.

When you're adding fruit to a salad, think of pairings its sweetness with something salty like fetta, halloumi or a cured meat like prosciutto, Jess says.
Some other suggestions:
- A salad of cherry, basil and goats cheese. (Good in a sandwich, too)
- A salad of watermelon, fetta and mint. (Delicious with a bit of lemon rind)
- A salsa of strawberry, semi-dried tomato, red onion and fresh coriander. (Great with steak or chicken off the barbecue)
