Easy eats: Stir-fried Quinoa with Broccoli and Fried Eggs

Quinoa cooks like a grain and fries up just like rice - with very delicious results.

Turning quinoa into something akin to fried rice is a lovely use of this seed, has a pleasant, gentle pop to its texture.

Kimchi is a fantastic way to add a ton of flavour to a dish with just one ingredient. Traditionally kimchi contains fish sauce and shrimp paste but there are a lot of vegan versions now widely available.

I’ve used broccoli, carrot and peas here but feel free to throw in any veges – especially greens - in your fridge that need to be used.

A fried egg on top adds a bit of protein and richness. I’ve kept this recipe meat-free but you can add some chopped raw bacon in with the onions.

To have the right amount of cooked and cooled quinoa on hand, cook 1 ½ cups of well-rinsed quinoa with 3 cups of water using the absorption method as you would with rice. Once cooked, spread out on a plate and place in the fridge to dry out and cool (that will take 12 hours in the fridge or a couple of hours in the freezer).

Ingredients

  • Oil for sautéing
  • 1 medium onion
  • 3 garlic cloves, minced
  • 1 Tbsp finely grated fresh ginger
  • 1 small head broccoli, roughly diced
  • 1 large carrot, peeled and diced
  • 3 cups cooked and cooled quinoa (see instructions above)
  • 3 Tbsp soy sauce
  • 2 tsp sesame oil
  • 1 tsp sugar
  • ¾ cup frozen peas
  • ¾ cup kimchi, roughly chopped if necessary
  • 1 spring onion, green part sliced
  • 4 eggs (1 per person)
  • Salt, to taste

Instructions

  1. Heat a drizzle of oil in a wok or pan over a high heat. Add the onion and cook, moving constantly for a few minutes.
  2. Add the garlic and ginger and cook for about 30 seconds before adding the broccoli and carrot. Stir fry this for a few minutes to soften.
  3. Add a little more oil if the pan is getting dry and then add the quinoa to the pan, moving constantly.
  4. Mix together the soy sauce, sesame oil and sugar.
  5. When the quinoa is hot, add the sauce with the peas and toss to combine. Cook until piping hot.
  6. Add the kimchi and spring onion just before removing it from the heat.
  7. Taste and add additional seasoning if needed. A little salt can be a better choice to adjust seasoning rather than more soy sauce.
  8. In a separate pan, add a drizzle of oil over a medium heat and fry the eggs according to preference. Serve each bowl of quinoa with an egg on top.
