Tomato Chilli Jam

This sweet and sticky condiment will soon become indispensable in your pantry. It's great on everything, especially eggs.

Make the most of a seasonal tomato glut by brewing up a batch of Peter Gordon's signature condiment.

Ingredients

  • 500g ripe tomatoes
  • 4 red chillies
  • 5 cloves garlic, peeled
  • 2 thumbs (25g) fresh ginger
  • 2 Tbsp Thai fish sauce
  • 300g caster sugar
  • 100ml red wine vinegar

Instructions

  1. 1.

    Puree half the tomatoes, all of the chillies, garlic, ginger and fish sauce.

  2. 2.

    Place in a pot with the sugar, and vinegar and bring to the boil, gently stirring all the time.

  3. 3.

    Chop up the remaining tomatoes, turn down the heat and add to the pot.

  4. 4.

    Cook for 25 minutes still gently boiling and stir often - you don’t want it catching!

  5. 5.

    Once it's thick and delicious, pour into sterilised jars and seal.
